PB& J Sandwich Cookies

Your kids will be the envy of all the kids in school when
they show up with PB&J Sandwiches made with cookies instead
of bread!
Think about it... bread is made from flour, eggs and butter...
Cookies are made from flour, eggs and butter. They will be
getting their meal and dessert all in one special treat.
Ingredients:
3 cups all-purpose flour
3/4 teaspoon baking powder
1/8 teaspoon baking soda
2/3 cup sugar
1/3 cup maple syrup
1/3 cup butter, softened
1 egg
1/4 cup unsweetened cocoa powder
peanut butter
jelly
In a medium bowl, combine flour, bakng powder and baking
soda. In a large bowl, using a mixer set on medium, beat
sugar, maple syrup, butter and vanilla; beat in egg. On low
speed, beat in flour mixture until a dough forms. Remove
one-fourth of dough; add cocoa powder to form chocolate dough.
Chill both doughs for 10 minutes.

Shape plain dough into a 5-inch-long log. On a floured surface,
using a floured rolling pin, roll chocolate dough to a 9x6
inch rectangle. Place plain dough in center of chocolate
dough. Wrap chocolate dough around plain dough, gently pressing
seams to seal.
Wrap dough in waxed paper. Flatten sides of dough to form
a square. Chill dough for 2 hours. Be sure dough is chilled
enough - if it is too soft it will be very hard to slice.
Preheat oven to 350 F. Grease 2 baking sheets. Slice chilled
dough into 1/4 inch thick slices. Place slices on prepared
baking sheets. using your fingers, press 2 sides of the slices
to resemble the shape of bread.
Bake cookies until just set, about 10 minutes. Transfer
cookies to wire racks; cool completely. Top half of cookies
with peanut butter; top with jelly. Place a second cookie
on top of peanut better and jelly... and wa la.... you got
a cookie sandwich!
