Crystallized Edible Flowers
Egg White Recipe
This recipe is suitable for edible flowers, leaves and soft
fruit, but the fruit will not keep for longer than a few days.
Egg white, lightly beaten
Superfine Sugar
Fresh soft fruit, flowers or leaves
Glently brush the egg white over the flower petal or fruit
using a small paint brush.
Place the wet flower, top side down, gently on the superfine
sugar, making sure that none of the petals have curled under,
then sprinkle the underside of the flower with sugar.
After coating the flower - place it on parchment paper to dry.
Leave for 3 or 4 days until the flowers are completely dry.
Cut off stems and store in an airtight container.
